Ingredients:
2 cups maize (corn), soaked overnight 2 cups fresh or frozen green peas 2 cups pumpkin or sweet potatoes, peeled and diced 2 cups fresh green beans, chopped 4 medium-sized potatoes, peeled and diced 1 medium-sized onion, finely chopped 3-4 tablespoons vegetable oil Salt to taste Water Instructions:
Drain the soaked maize and rinse it thoroughly.
In a large pot, add the maize and enough water to cover it. Bring it to a boil and cook until the maize is soft and fully cooked. This can take about 1 to 1.5 hours, depending on the type of maize.
In a separate pot, cook the green peas, pumpkin or sweet potatoes, green beans, and potatoes with enough water until they are tender. You can also add a little salt to the water for seasoning.
Once the vegetables are cooked, drain any excess water, but keep a little of it for later use.
In a frying pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent and slightly browned.
Add the boiled vegetables and maize to the frying pan and mash them together with the onions using a wooden spoon or potato masher. If the mixture seems too dry, you can add a little of the reserved vegetable water to achieve the desired consistency.
Continue mashing and stirring until the ingredients are well combined and the mixture forms a smooth, uniform texture. Season with salt to taste.
Once everything is well-mixed and mashed, cover the pan and let it cook for a few more minutes on low heat to allow the flavors to meld together.
Remove from heat and serve hot. Mukimo is traditionally enjoyed with a side of grilled or stewed meat, chicken, or a rich tomato-based stew.
