Just taking a few minutes to introduce myself, the names Brian Lubang'a, friends and family over the years have called me by many things, Uncle Brayoo, Brian the Butcher, Bear, but everyone who knows me, knows one thing, just don’t call me late for dinner.
Hedge Heaven Farms and myself have joined forces, to bring you an experience and to help connect you closer to the food that you and your family enjoy everyday and that I am extremely excited to share with you!
What exactly is that experience, in the years before electricity, families would come together and process an animal together In order for the meat not to spoil it was divided up, dried, cured… they did what they did to make sure things didn’t go to waste. We want to invite you to help with the process with your food, ask questions, learn and grow as we learn and grow.
I’ve practiced the artisan trade of Butchery for over 14 years, I have forgotten half of everything I know and I’m relearning everything I thought I knew. That’s my polite way of saying I still have a lot to learn even after 14 years, But I’m always learning and growing, and desiring to bring the best possible product for my customers, and once you know me I’ll be the first to say my friends!
My heart and soul, leads to your plate, I love to create and experiment with food, nothing is off limits! Mistakes happen you grow, you learn, you try again!
I have a deep desire to reinvent the wheel, to take people back to the old ways, but with the benefits that technology and with our understanding of meat science has to offer us. How are we planning on doing this, Buy taking the road less travelled, humidity controlled aging techniques, curing without the harsh overly processed nitrites, and the most important thing hoping you’re willing to get your hands dirty!
The Headon Family and myself would love to welcome you to a old way of doing things, but with some fresh faces, we want to welcome you warmly to the Sidai Oleng Butchery, where we will work hand in hand with you, to help you love, grow and experience your meat in a way that will deepen your understanding and appreciation for what’s on your plate.🙏
