Vibibi are sweet, soft and delicious pancakes made from a rice and coconut batter. They are famous in the E/African communities and are especially enjoyable during Ramadhan.
Rice and Coconut Batter Pancakes are a delicious and unique twist on traditional pancakes. These pancakes have a slightly chewy texture and a subtle coconut flavor that pairs well with sweet or savory toppings. Here's a simple recipe for making Rice and Coconut Batter Pancakes:
Ingredients:
1 cup cooked rice (white or brown rice works) 1 cup all-purpose flour 1/2 cup shredded coconut (sweetened or unsweetened) 2 tablespoons sugar 1 teaspoon baking powder 1/4 teaspoon salt 1 cup coconut milk (or regular milk if preferred) 1 large egg 2 tablespoons melted butter (or coconut oil) Additional butter or oil for cooking Optional toppings: maple syrup, honey, fresh fruits, whipped cream, or shredded coconut Instructions:
In a large mixing bowl, combine the cooked rice, all-purpose flour, shredded coconut, sugar, baking powder, and salt. Mix well until all the dry ingredients are evenly distributed.
In a separate bowl, whisk together the coconut milk, egg, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients and stir until you have a smooth pancake batter. The batter should be thick but pourable. If it's too thick, you can add a little more coconut milk to reach the desired consistency.
Preheat a non-stick frying pan or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
Spoon about 1/4 cup of the pancake batter onto the hot pan for each pancake. You can spread the batter slightly with the back of the spoon to make them flatter.
Cook the pancakes for 2-3 minutes on one side or until bubbles form on the surface. Flip the pancakes and cook for an additional 1-2 minutes until they are golden brown and cooked through.
Remove the pancakes from the pan and keep them warm. Repeat the process with the remaining batter.
Serve the Rice and Coconut Batter Pancakes warm with your favorite toppings. You can drizzle them with maple syrup, honey, or sprinkle with shredded coconut for extra coconut flavor.
Enjoy your delicious Rice and Coconut Batter Pancakes as a delightful breakfast or a special treat for any time of the day!
